Mitchel van der Gaag was developed in the youth academy of PSV Eindhoven. With minimal playing chances in the first team, he went on loan to several Dutch clubs before finally leaving PSV and moving abroad to Scotland in 1995.

A return after two seasons home to FC Utrecht in 1997, he joined CS Maritimo in the summer of 2001. CS Maritimo is a Portuguese club located on the isle of Madeira. Mitchell became a solid defender in the Portuguese league and captained his club. In June 2006 he signed for Al Nassr to join the Saudi Arabian league. After three months, Mitchel was fired together with Portuguese coach Artur Jorge because of bad results.

Because of an injury, he decided to hang up his boots in autumn 2006. He returned to his former club at Funchal as assistant-coach. In October 2009 the club announced that Van der Gaag was the new head coach of the Portuguese club.

In September 2010 he was sacked at the club as head coach. Van der Gaag joined Belenenses as their new head coach in June 2012. After gaining experience in his coaching career in Portugal, he tried his luck outside the country. A short spell on Cyprus but in 2015 also Dutch club FC Eindhoven signed the talented coach. Van der Gaag managed the second tier club in the 2015-16 season and showed his coaching quality back in his home country. Also on the highest league level came the interest and Excelsior Rotterdam signed him as their new head coach in the 2016-17 season. He prevented the club from relegation in his first season in the Eredivisie as head coach.

Mitchell van der Gaag has two sons who also play in youth teams of Benfica on the highest level in Portugal.
